Products:

You can load a different product that has several views.

Layouts:

You can replace one view of your product without changing the product or the other views.

Unfortunately currently there is no documentation on this. We will add it on our to do list.

I'm baffled by layouts and want to use them. Do you have some support documentation on this please?
